Chocolate Chip Toffee Cookies
Ingredients
1 cup packed brown sugar
1/2 cup buttermilk
1/2 cup shortening
1/4 cup honey
1 egg
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
2 cups semisweet chocolate chips
1 cup chopped white chocolate
1. Heat oven to 350 degrees F (175 degrees C).
2. In a large bowl, mix brown sugar, buttermilk, shortening, honey, and egg. Stir in flour, baking soda, baking powder, and salt. Stir in chocolate chips and chopped white chocolate.
3. Drop dough by level 1/4 cupfuls about 2 inches apart onto ungreased cookie sheets.
4. Bake 12 to 14 minutes, or until edges are golden brown. Cool for 4 minutes, and remove from cookie sheets.
Chocolate Bundt Cake
Ingredients
1 package chocolate cake mix
1 (4 ounce) package instant chocolate pudding mix
3 tablespoons cocoa
1 3/4 cups milk
2 eggs
2 cups milk chocolate chips
powdered sugar
1. In large bowl, combine cake and pudding mixes, cocoa, milk and eggs.
2. Beat on low speed till moistened, then beat on medium for 2 minutes.
3. Stir in chocolate chips.
4. Pour into greased and floured bundt pan.
5. Bake at 350 degrees for 55-60 minutes or until a toothpick inserted near the center comes out clean.
6. Cool for 10 minutes, remove from pan, cool completely and dust with powdered sugar before serving.
Chocolate Pudding Pie
4 ounces cream cheese, softened
2 tablespoons white sugar
1 tablespoon milk
1 (8 ounce) container frozen whipped topping, thawed
2 (3.9 ounce) packages instant chocolate pudding mix
2 cups milk
1 (9 inch) prepared chocolate cookie crumb crust
1. In a large bowl, combine cream cheese, 2 tablespoons sugar and 1 tablespoon milk. Beat until smooth. Gently fold in half of the whipped topping. Spread on the bottom of crust.
2. In a large bowl, combine chocolate pudding mix with 2 cups milk. Beat with wire whisk for 2 minutes (mixture will be thick.) Spread over cream cheese layer. Refrigerate 4 hours or until set. Just before serving, spread remaining whipped topping over pudding layer.
